When you buy your veggies at the grocery store I ask again that you look at the country of origin. I know it is winter in the majority of the US but there is still plenty of veggies that are grown in the US. Yes this means that you might have to change your menu while walking through the produce section but flexibility is the key.
A few weeks ago as I was contemplating whether to buy lettuce or not I spied the works "Living Lettuce" Grown in Livingston, TN. Being a TN girl I had to check it out. The use of a plastic container to ship and market the lettuce might cause a bit of dialogue about its use, but because the lettuce is packaged with its roots it is necessary.
As I expected the living lettuce is grown hydroponically. I am familiar with this because I was a member of a Community Supported Agriculture (CSA)farm where most of the produce was grown using this growing practice.
This is going to be a weekly staple on my grocery list.
